A Hitch for Our Van

My family and I love to travel as well as outdoors. That is why every spring, summer and winter break, we make sure that we have planned activities during these school breaks. We do some camping, hiking, fishing, see National parks, state parks and so on. So, it is really necessary for us to someday buy a trailer, that way we can avoid staying at hotels and minimize eating at restaurants, thus saving us a lot of money. We think our van is good enough to haul a trailer like the class C RV. All we need to do is install a hitch at the back of our van. We can shop for a hitch at HitchDepotUSA.com for curt trailer hitches, too. I wonder if my in-laws need a new hitch for the RV. I need to find out next time we speak to them on the phone. In case they need one, then we can shop together online for curt trailer hitches and accessories.

Singing Karaoke Outdoor

Every year when we celebrate our son's birthday, we have friends over for a party. Kids play; parents/adults eat, chat and sing karaoke. We have been doing it since J's first birthday. We always have fun as usual. Adults have so much fun as the kids have especially when we sing karaoke. The only thing I don't like about it is that it's in July when the temperature in Texas is extremely hot! And so, we ended doing the party indoor. I just wish it will cool down a little bit so we can have the party outside. I would like to have an  outdoor loudspeakers so we will enjoy our singing, lol. We, Filipinos love to sing, though sometimes most of us don't even have talent in singing; we just want to sing and enjoy the company of our family and friends. I really think that having loudspeakers outdoor makes the singing more enjoyable; what do you think? I remember growing up, my brother had a big speakers that he used outdoor when we have parties at home. We enjoyed it being part of the special occasions.

The other  night when I was browsing a certain website, I saw a neat  looking cd rack that I can use for our cd collections. The cd rack is made of wicker and that is how I liked it a lot. The size is the right for the amount of cd we have. But when, I tried to buy it, unfortunately, it was already sold to somebody else. I was just few minutes late :-(. I hope I can find a wicker made cd rack like that again. I need to keep looking.

Pasta Salad, Take it Easy on It!

Just want to share one of our family's all time favorite healthy salad. It's got meat, cheese, fruits and pasta. This dish is a Filipino style chicken macaroni salad and is really good! The dish itself is a complete meal already. The bad side of i is that, it raises my blood sugar high. The pasta itself is not good for me, but for my husband and son, this dish is perfect. I can eat a little bit of it and I will still be fine though. For now, I eat more raw salads with fruits and healthy dressing using olive oil and apple cider vinegar. Anyway, if you are into  a complete meal, try this one...and for you who is a diabetic...you need to take it easy on this, lol

  •   1/5 kilo macaroni noodles
  • 2 to 3 pieces, medium sized carrots
  • 1 big chicken breast
  • 500 ml of mayonnaise
  • 1 can (836 g) pineapple chunks or tidbits
  • 1 big white onion, finely chopped
  • 1/2 cup sweet pickle relish
  • 3 hardboiled eggs, diced
  • 1 cup diced cheddar cheese
  • 1/2 cup raisins
  • salt and pepper to taste

Macaroni Salad Cooking Instructions:

  • Cook macaroni noodles according to package cooking instructions.
  • In a pot, boil carrots in water for 15 to 20 minutes or until cooked.
  • Drain carrots and let cool. Peal skin then dice.
  • Boil chicken breast in water with salt. Drain chicken breast, then shred in 1 inch lengths
  • Drain pineapple chunks or tidbits.
  • Combine all ingredients while adding salt and pepper, to taste.
  • Refrigerate, then serve.

I have been living in United States for almost 12 years now and I am loving it. I have totally adjusted to my new way of live though it is completely opposite on the how I lived my life 11 years ago.With all the conveniences of modern technology  offers me as a wife and mother, I am not sure anymore whether I can go back to my old life back in the country where I was born and raised. I grew up in a country where everything is simple. Mailman delivers the mail the old fashioned way, no apartment complex, internet connection is very limited, they means of transportation is still the same (tricycles, buses, and trains. No wonder mails are received very slowly. To get the mail expedited, you will need to go to the nearby city, and pay expensive fees!

When I came to the U.S., my husband and I lived in an apartment for six months before we moved in to our first house. We got our mail through private mailboxes located in the apartment complex. I like the way they deliver the mail. It was safe and protected. I am pretty sure the manager/owner of the apartment complex got the private distribution mailboxes at auth florence  mailboxes direct. This company sells all kinds of mailboxes in different sizes, shapes, and materials. Anyway, though we now live in a house with our own choice of mailbox, I still feel that it is safe to use private distribution mailboxes for the mails are safe and protected. Nobody can get our mails, but us especially when we are away for days or so. As I browse in the website, I've found out that we can buy our own mailbox at auth florence for a fair price. I need to convince my husband to see if he will let me buy a new mailbox from this website. I am crossing my fingers with a hope that he would agree :-).
